I’ve been making this Dairy Free Fig and “Caramel” Overnight Oats Recipe as a make-ahead breakfast and it’s so good! True story- I never even tried overnight oats until last week. I love oats in porridge, oatmeal raisin pancakes and my oat bars but hadn’t tried overnight oats before. Cold oats never really appealed. Recently I gave in and made overnight oats because I was looking for some make ahead breakfast options to save time in the morning. I was surprised by how much I like overnight oats! I’ll definitely be making other variations.
1. In a bowl mix together the oats, flaxseeds, cinnamon, and ground cardamom. Then add the almond milk and maple syrup and stir all the ingredients together. If you are having these oats to-go the next morning, transfer into a mason jar or portable container.
2. In a separate little bowl (I use a ramekin) mix together the almond butter, coconut oil and maple syrup. If you just want to mix in the “caramel” rather than have “caramel” chunks, add it to the oats now. If not, cover and refrigerate mix the “caramel” and the overnight oats. I refrigerate the “caramel” so that it hardens and can stay firm in chunks lager on.
Tip: I actually make a larger batch of “caramel” and keep it in the fridge, so if I have some “caramel” that's already firmed up in the fridge, after l’ve mixed the oats I actually just spoon in some caramel chunks and then place in the fridge overnight, so the next morning all I have to do is add some diced fig on top.
3. In the morning, scoop ¼ tsp size chunks of “caramel” out of the ramekin and lightly spoon them into the oats, distributing them evenly throughout the overnight oats mixture.
4. Roughly dice the fig and put it over the top of the oats. Serve immediately or save it for later in the day.
