It’s quick, easy, healthy and oh so scrumptious! You can change-up the ingredients to suit your taste, but please give the silken tofu ‘mozzarella’ a try – you will fall in love!
1. First, pre-heat the oven to 200°C/400°F/gas mark 6. To make the ‘mozzarella’, carefully slice the silken tofu into thin pieces and then, using a shot glass, cut out small round moulds. Slice these into little half moon shapes.
Never mind the shot glass! It’s from my recent trip to Norway :)
2. Spread the tomato puree over the base, using the back of a spoon. Sprinkle over the thyme and oregano. Sprinkle the tofu slices with nutritional yeast and garlic powder and add to the base. Drizzle over the lemon juice. Spread the sliced pepper, mushroom, tomato, artichokes and olives evenly over the top.
3. Now drizzle over the olive oil, making sure the tofu and veggies are well coated. Place on top shelf of a pre-heated oven and cook for about 8 – 10 minutes, depending on your base. Keep your eye on it. Once baked, finish off your masterpiece with fresh basil leaves and freshly cracked pepper! Enjoy!
